We remodeled the interior for an udon noodle restaurant that prides itself on the skill of its noodle-making staff and the freshly boiled, handmade noodles it offers customers. An open kitchen lets customers see the chefs at work, but we wanted the experience to be even more immediate. We used the motif of a chef's table, at which the chef creates food specially for customers invited into the kitchen. The space lets the customer fully experience the energy and the cooking process, from the moment the staff roll out the udon and warm the broth to the moment they drain the boiled noodles. We cut off the exterior light and darkened the edges of the seating area to make the interior stand out as a true "kitchen restaurant".
